I'm continually amazed how the Italians can take an ordinary food, like an onion, and give it such a fantastic flavor. When onions are cooked this way, they are sweet and browned--just right on a piece of grilled bread as an appetizer, on top of pizza, tossed into fresh pasta or tucked in a "panino" (sandwich).
