This colorful, spring salad can be made with either diced mangoes or sliced strawberries. I would make it with whichever of those two fruits has the most flavor. You can buy a mango that's hard as a rock...or strawberries that are red, but have no flavor. If in doubt, use canned peaches or mandarin oranges instead. The dressing is very lightly sweetened and pairs well with fruit and greens.
