Cheese Secrets


  • 1/2 C. (115 g) butter, softened
  • 2 C. (250 g) sharp cheddar cheese, grated
  • 1/2 tsp. salt
  • Dash of paprika, optional
  • 1 C. (125 g) flour
  • Black or green olives, pitted


  1. Cream butter in a bowl or food processor.
  2. Add cheese, salt and paprika and blend, then add the flour. Work into a smooth dough but don't overwork it.
  3. Chill slightly if the dough is too soft to handle. Then shape some dough around each olive, or shape into pumpkins or acorns.
  4. Bake at 400° F (200° C) on an ungreased baking sheet for 15 minutes or until lightly browned.
  5. May be made one day ahead. Warm in the oven if desired, or if you want to crisp them up.

Shaping Cheese Secrets into pumpkins:

Pinch off a small piece of dough and roll into a ball

Press in your thumb to make an indentation

Set an olive in the indentation

Press the dough around the olive


Insert a small piece of pretzel in the top and use a toothpick to press ridges into the sides of each pumpkin
















Shaping Cheese Secrets into Acorns:

Pinch off small piece of dough and roll into a ball

Make an indentation with your thumb

Put an olive in the indentation

Press the dough arond the olive and pinch the bottom into a point

For the acorn "cap", make another ball--smaller than the first--and press an indentation into it

Place the cap on top of the acorn

Pinch the top of the cap into a "stem"

Use a toothpick to press alternating lines (crosshairs)

Place on baking sheet and chill before baking
