Endive with Goat Cheese and Caramelized Onions

Ingredients

  • 4 oz./115 g creamy goat cheese
  • 4 oz./115 g cream cheese
  • A little thyme, if desired
  • Endive leaves

Instructions

  1. Combine the two cheeses in a small bowl and blend. Add a bit of thyme (fresh or dried) if you like.
  2. Spread some of the cheese mixture on each endive leaf. Top with a little bit of caramelized onions. I would recommend not preparing these more than an hour before serving them or the endive will begin to lose its crispness.

Ingredients

  • 2-3 T. olive oil
  • 1/4 C. (60 ml) Balsamic vinegar
  • 1 tsp. brown sugar
  • 4 medium onions, thinly sliced

Instructions

  1. In a large saute pan, heat the olive oil. Add the vinegar, sugar and onions. Cook very slowly for 45 minutes to an hour, adding a few tablespoons of water once or twice if they look too dry. Shake generously with salt. Serve warm or at room temperature.
