Peaches & Cream

Yield: Serves 4, easily doubled

Peaches & Cream


  • 8 canned peach halves
  • 4 oz./100 g cream cheese
  • Amaretti cookies or graham crackers (optional)
  • Mint leaves (garnish)


  1. Place the peach halves in a baking dish or pan.
  2. Spoon a little of the peach syrup into a bowl with the cream cheese and stir gently. Add more syrup if necessary until the mixture is soft enough to spoon into the centers of the peaches, but not too runny. Fill the centers of the peaches.
  3. Crumble some Amaretti cookies or graham crackers over the peaches and cream to give it a bit of crunchiness. You could also use granola or finely chopped nuts as a nice contrast in textures with the smooth peaches and cream.
  4. Warm in the oven, if you want, or serve them cool on a hot, summer day.
